Roasted Cauliflower with Lemon and Thyme

Want a vegetable dish that’s quick and easy? You’re going to love this roasted cauliflower with lemon and thyme dish! I’m always looking for new ways to cook vegetables. If I set out a crudité plate, I would probably be the only one to eat most of it. However, I had a few more takers with this dish. It’s fairly simple. It doesn’t have a lot of ingredients, which is great! But, it does pack a savory punch!

Preheat the oven to 500°. Wash and chop a whole head of cauliflower. Discard (or compost) the leaves and stalk. Generally, you want the florets to be bite sized. Put them in an oven safe pan. I used a glass baking dish. Drizzle the juice from one whole lemon over the top and mix. Add the olive oil (or avocado oil), minced garlic, and thyme. Mix thoroughly. Place in the oven. Stir after 10 minutes. Place back in the oven for 10 additional minutes. Voila! Sprinkle on a little more thyme for color. It’s delicious!

Ingredients
  1. 1 head of cauliflower; cleaned and trimmed to florets
  2. 1/4 c. extra virgin olive oil (or avocado oil)
  3. 1 tsp. minced garlic
  4. 2 Tbsp. lemon juice
  5. 1 tsp. sea salt
  6. 1/2 tsp. black pepper
  7. 1 tsp. thyme; divided

Notes
  1. If you want, you can prepare the dish one to two days ahead of time by letting the cauliflower soak in the lemon juice overnight in an oven safe dish with a lid.
  2. This dish also reheats well.

  5. Mmmmmmm … just peeking back through some of your older posts and came across this. Love, love it! :D I’m a huge fan of roasted veggies – it’s really one of the very best ways to cook them (I think) since it caramelizes them and makes them about 1000x more delicious! Roasted cauliflower is a family favorite for us, but I’ve never tried this lovely combination of thyme and lemon – sounds utterly fantastic! I’m totally pinning this one! (Oh – and of course your photos are drop-dead gorgeous and pretty much have me drooling! :D )
